Mexican Fried Rice

Servings : 3

Ingredients

  • Cooked Rice
  • Oil
  • Thinly Sliced Onions
  • Finely Chopped Tomatoes
  • Thinly Sliced Capsicum
  • Mixed Boiled Vegetables (Sweet Corn , Carrots and French Beans)
  • Whole Dry Kashmiri Red Chilli
  • Coarse Chilli-Garlic Paste
  • Salt

Directions

  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes
  2. Add the prepared chilli-garlic paste, tomatoes and capsicum and sauté on a medium flame for 1 to 2 minutes
  3. Add the salt and 2 tbsp of water and sauté on a medium flame for a minute
  4. Add the mixed vegetables and 1 tbsp of water, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally
  5. Add the rice and a little salt, mix well and cook no a medium flame for 2 to 3 minutes, while stirring occasionally
  6. Serve hot
